2 egg yolks

50 gr butter

0.2 l cream

100 gr Grana Padano

200 gr smoked bacon

250 gr pasta

First fry the 200 gr bacon crispy in some of the extra butter, drain in a colander.

Put a bain marie pot on the stove, and start melting the other 50 gr of butter.

Add the bacon, give it some time to melt together.

Add the 0.2 l cream and 100 gr Grana Padano, and again, it takes time, stirr until all melts and blends together.. In the meantime, maybe check if there's still water in the boiling pot underneat the bain-marie. No water, no steam.

At the end, add the 2 egg yolks.

This thickens your sauce.

In the meantime, cook the pasta.
